With our three commitments—delicious flavor, affordability, and safety—we offer unagi that delivers the perfect balance of quality, value, and peace of mind.

Commitment Unagi(Grilled Eel)

The live eels we receive are carefully kept in a dedicated holding area at the restaurant, known as a *tateba*.
Over one to two days in clean, fresh water, the eels are allowed to purge impurities, reducing the distinctive earthy odor associated with freshwater fish and bringing out their natural flavor.
We keep the eels alive until just before preparation and strictly ensure that they are used within a designated timeframe and according to established procedures.
This meticulous approach to freshness is what gives our eel its tender, fluffy texture and perfectly balanced richness.

Commitment

Kazutoyotei is more than just an eel restaurant. We are committed to sharing the true deliciousness of Katsuman (live eel) and making every moment spent enjoying eel a richer, more memorable experience.

It is said that approximately 70% of eel products on the market are processed in factories.
At Unakatsu, what matters most is serving a carefully prepared meal made from live eel through the craftsmanship of our skilled chefs.

Working with live eel.
Preserving its freshness until just before cooking.
Carefully preparing, skewering, and grilling each eel by hand.

It is precisely this dedication and attention to detail that allow us to bring out the distinctive aroma, tender and fluffy texture, and natural umami of Katsuman.

We are committed to passing on the culture of enjoying delicious eel to future generations.
